Strawberry bottom cupcake

 
 

I am not convinced that “Strawberry bottom cupcake” sounds as appropriate  as it’s Black bottom cousin, but  as  a newcomer to the whole baked-cheesecake-on-top-of-a-cupcake thing, I didn’t really know what else to call it.

Needless to say, my strawberry bottom cupcake is truly delicious!! It was a complete experiment, and I ran out of time to make some pretty strawberry frosting, but in the end it wasn’t necessary. These were a complete flavour package in their own right.

I cut  a few strawberries into small pieces and put them into the bottom of each cupcake wrapper, before scooping the cupcake and strawberry cheesecake  batter on top. Delicious!

 
 
 
 

For those who prefer a more moderate treat, perhaps without the fanfare of fancy frosting, these cupcakes really hit the spot. More like a muffin, they are perfect for a late breakfast or an afternoon pick me up.

I may tweak the recipe before writing it here, so stay tuned……it will be worth the wait.
