Let’s Be Pen Pals

Hello Lovelies, and welcome to my happy place. I hope you have all enjoyed your week, especially with this lovely cooler weather. Baking in the winter months is something a lot of us find enjoyable. Who can resist the smell of warm spices floating out of the oven or a piece of delicious cake with a steamy mug of hot chocolate after dinner?

This week I tried a new cake recipe. Spicy Pumpkin Bundt Cake from the very talented Tilly Pamment from Tilly’s Table ( https://tillystable.com.au). Her beautiful new book “The Plain Cake Appreciation Society” is the most wonderful no fuss, easy to bake recipe book filled with stunning photography, fabulous florals and deliciously unexpected flavour combinations. Earl Grey Tea Cake with Roasted Apricots anyone?

The pumpkin cake was a hit. For a cake saturated home such as mine, there are no eyebrows raised when a freshly baked treat sits on the kitchen bench after school. ‘Meh. Mum’s been baking again’, I can hear the children’s thoughts as they swagger past, dump school bags and ignore my cake which will sadly end up in the bin. True story. But when the dear treasures spotted this ‘plain’ pumpkin cake they knew something was up. Their little antennae sensed a shift in the baking agenda and they were more than pleased to hear this was a new cake recipe and yes they could eat it. A slice or two may have even ended up in the lunch boxes the next day, a true sign of a successful cake.

This cake was deliciously moist, easy to bake and the extra spices enhanced the overall flavour beautifully. There is no need for more than a light dusting of icing sugar as the cake holds its own without the need for more elaborate frosting.

I have been a fan of Tilly’s work for a long time. I am impressed with how beautifully she transforms plain cakes into little works of art through her styling and photography. As a busy mum, her recipes are simple and easy to bake. It is therefore with great pleasure that I am offering a copy of her stunning book as a giveaway prize.
