Lemon coconut cake
For the love of lemon
We grow lemons at our place. Lots of lemons. Our little orchard is full to the brim this time of the year. The colours are magnificent. There has been a large bowl of lemons staring at me for about two weeks now. More like glaring at me actually. Every time I walk past them my eyes are diverted and I marvel at their simple beauty.
Mint Black bottom cupcakes
I continue to experiment with Black bottom cupcakes. These have a choc mint flavoured cheesecake topping baked into a rich chocolate cupcake base. Nice. These are fun to make and appeal to those who prefer something not so sweet. I admit that I am enjoying these variations and am toying with a few new ones. How about chocolate jaffa orange? Hmmm… (Thanks Heather!)
Best ever Banana Bread
I love this recipe. I have only made it once, and would normally test bake it a few times before putting it on my blog, but this was perfect the first time! Truly!
This is like the real cafe banana bread that you always admire, but sadly overlook to select a more decadent treat. (Or is it just me?!)

This has been my standard biscuit recipe for years. These are the perfect comfort food.
I learned a long time ago that there are a few essential ingredients needed to bake the perfect chocolate chip cookie. You must include an egg, a hefty dose of peanut butter and a lot of good quality dark chocolate. No skimping !!

I am not convinced that “Strawberry bottom cupcake” sounds as appropriate as it’s Black bottom cousin, but as a newcomer to the whole baked-cheesecake-on-top-of-a-cupcake thing, I didn’t really know what else to call it.
Black bottom Cupcakes
I have recently discovered Black bottom cupcakes.
This is where a chocolate cheesecake mixture is placed on top of a normal cupcake mix before baking. The result is a decadent power hit of flavour. Apparently these are an American idea and most likely very popular there. I am probably the only ignorant Australian who has never heard of them!!
